Heuvos

Charlie and I are big on eggs for breakfast. Here are two Mexico inspired egg dishes we love:

Baja Egg Tacos
 
These are made with some leftovers from fish taco night. For 2 people, scramble 2 eggs with a laughing cow cheese wedge and half a serving of soyrizo, serve on a corn tortilla and top with lowfat yogurt mixed with chipotle tabasco and some cabbage. About 150 calories per egg taco.

Chilaquiles
 
Authentic chilaquiles are stale corn tortillas cooked in either green or red sauce and are often topped with chicken, egg or chorizo. This is my americanized version made with fresh tortillas, a half cup of costco organic salsa, a fried egg, and soyrizo. About 210 calories (in this dish we shared a full serving of soyrizo, rather than a half serving as above).

Soyrizo is available in lots of stores, in with the Chorizo at QFC, but I like the one from Trader Joes. It seems like it's made of TVP and lots of smoked paprika.

Chilaquiles with Avocado
 
This is the same as above but topped with avocado and no soyrizo. About 180 calories.
